Quinoa Salad
Ingredients
Directions
Cook quinoa in water until translucent. While that's cooking, chop up produce and combine in a large bowl. Add canned ingredients. In a small bowl, mix sauce ingredients. Once cooked, add quinoa to large bowl. Add sauce to large bowl and mix.
This recipe can be served in several ways. Use it as a side dish with chicken, eat it as a dip with tortilla chips, or make quinoa tacos topped with sour cream. Refrigerate or freeze leftovers.
- 2 cups quinoa
- 3 cups water
- 2-4 tomatoes
- 5 cloves garlic
- Half onion
- Half green bell pepper
- Half cilantro bunch leaves
- 1 can corn
- 1 can black beans
- 1/4 cup olive oil
- 1 tbsp ground cumin
- 1 tsp salt
- 2 limes (juice)
